4 Yellow Squash or Zucchini 2 carrots
1 cup bread crumbs 1 TBSP Old bay seasoning
salt and pepper to taste 2 eggs
Grate squash or zucchini, and carrots into bowl. Beat eggs and add bay seasoning and fold into grated squash and carrots. Add breadcrumbs. Form into patties, then fry in olive oil until brown on both sides. Great dipped in ketchup or sauce of your choice.
*This recipe varies depending on the size of the squash. If it is too moist to form into patties, add more breadcrumbs, if it is too dry, add more egg.
