Potato, Kale, and Sausage Soup

1/3 cup olive oil                                                1 med. onion, chopped

¼ lb. sausage, sliced or ground                         1-2 garlic cloves, minced

6 cups water or broth                                       3 med. potatoes

1 bunch kale or collard greens                           salt and pepper to taste


Heat the oil in a medium skillet; sauté onion and sausage until sausage is cooked through.  Add garlic and set aside.  Clean the potatoes and chop.  Bring 6 cups of water or broth to a boil and cook the potatoes until soft.  Blend potatoes into the water or broth.

De-stem the kale or collard greens, chop leaves into bite size pieces.  Add to the potato mixture; simmer for 5 minutes.  Add the reserved sausage, onions, and garlic with the oil they were cooked in.  Heat through for 2 to 3 minutes.  Add salt and pepper to taste.  Enjoy!
