Roasted Parsnips

1 pound Parsnips, peeled and cut into 3”x1/2” sticks    

¼ tsp each salt and fresh ground black pepper                   

2 TBSP olive oil                                              

1 tsp chopped fresh oregano

 

   Preheat the oven to 375.  Line a baking sheet with parchment paper or foil.  Place the parsnips in a large bowl.  Add the oil, oregano, salt, and pepper.  Toss to coat well.  Place on the prepared baking sheet.  Roast, turning occasionally, for 30 minutes, or until the parsnips are tender and lightly browned.
