Ground Beef and Eggplant Skillet

1 lb. ground beef                                             

1 clove garlic, crushed                                     

1 eggplant, peeled, chopped                            

1-2 peppers, chopped                                     

1 onion, sliced                                                 2 cups chopped tomatoes

1 cup tomato sauce (I like to triple this)

½ tsp salt

dash of pepper

1 tsp basil

1/2 tsp dried oregano

1 cup cooked rice (I like to double this)

                                      

1.      Brown ground beef with garlic in skillet, stirring until crumbly; drain. 

2.      Add eggplant.  Cook for 10 minutes, stirring frequently. 

3.      Add next 8 ingredients; mix gently.  Simmer, covered, for 15 minutes, stirring occasionally. 

4.      Serve over rice. 

 

May be made ahead and reheated.  Serves six.
