Swiss Chard and Tomatoes

From Asparagus to Zucchini, A guide to Farm Fresh Seasonal Produce

 

3 TBSP olive oil                                               salt and pepper to taste

1 medium onion, sliced                                      1 bunch Swiss Chard, chopped

1 cup peeled and chopped tomatoes                 1/3 cup Parmesan cheese

¼ tsp basil                                                        1 tsp. oregano

 

Heat the olive oil in a large skillet over medium heat.  Add onions and sauté until soft.  Add tomatoes, basil and oregano; cook 5 minutes.  Add chard and simmer 15 minutes or until tender.  Stir and add a little water if chard are sticking.  Sprinkle with cheese while hot and season with salt and pepper to taste.  Serve immediately.
