Quick Pickle

From former farm apprentice, Shad


2 med. cucumbers, quartered lengthwise then halved

½ cup white vinegar                                          ¼ cup cider vinegar

4 cloves garlic, peeled                                       2 tsp salt

¼ tsp crushed red pepper *optional


Place sliced cucumbers in a clean quart jar.  Add remaining ingredients, then fill remaining space with water.  Refrigerate for 24 to 48 hours.  Enjoy!
