Spinach, Scapes, and Scallions

Another Farmer Paul original


One bunch or one bag spinach, washed and rough chopped

Half a bunch of scallions, sliced into ½ inch pieces

A handful of Garlic Scapes, chopped into ½ inch pieces

About ¼ cup oil (I tend to use a whole lot)

Salt and pepper


Put the oil in a large skillet and heat over medium heat; sauté the garlic scapes until par tender, and then add scallions.  Sauté about 1 to 2 minutes more.  Add spinach and toss until wilted, season with salt and pepper to taste.
