½ large red cabbage (or one small cabbage)
1-cup feta cheese
1 apple, diced
2 TBSP sunflower seeds
4 TBSP tangy vinaigrette
Tangy Vinaigrette:
6 TBSP olive oil,
2 TBSP lemon juice
1 tsp smooth green peppercorn mustard
1 clove garlic, crushed,
pinch of salt
Slice the cabbage very thin. Mix with the feta, apple, and sunflower seeds. Toss well to coat with the dressing and enjoy!
