Fresh Tomato Sauce

1 TBSP Olive Oil                                             1 TBSP coarsely chopped fresh basil

1 large onion, chopped                                     ½ tsp dried oregano

1 large pepper, chopped                                   salt and freshly ground black pepper

4 garlic cloves, minced                                      2 lbs. ripe plum tomatoes, skinned and    coarsely chopped

 

*To skin tomatoes:  wash tomatoes and lightly score the skin.  Boil a pot of water.  Once boiling remove the pot from the heat, submerge the tomatoes for about 30 to 45 seconds then remove and immediately plunge into ice water.  Immediately peel skins and compost. 

 

Heat the oil in a large saucepot.  Add the onion, pepper, and garlic and sauté over medium heat, stirring until onion is just tender, about 7 minutes.  Add the tomatoes, basil, and oregano, bring the mixture to a boil and cook just until the tomatoes are heated through, 4 to 5 minutes.  Add salt and pepper to taste and serve.
