1 TBSP unsalted butter
1 large onion, thinly sliced
1 ½ pounds red cabbage, thinly sliced
1 large golden delicious apple, thinly sliced
1/3 cup cider vinegar
1/3 cup sugar
¾ tsp salt
¼ tsp freshly milled black pepper
Preheat oven to 375F. Melt the butter in a Dutch oven over medium heat. Add the onion and sauté until golden, 3 to 5 minutes. Remove from the heat and stir in the cabbage and apple.
Which together the vinegar, sugar, salt, and pepper in a cup until the sugar is dissolved. Pour over the cabbage mixture. Cover and cook in the oven for about 45 minutes, or until the cabbage is crisp-tender. Stir thoroughly; taste and adjust seasonings.
