Stuffed Peppers

A favorite recipe contributed by a fellow shareholder! 

 

1 lb. ground beef                                              2 TBSP olive oil

1 small can tomato paste                                   1 med. red onion, finely chopped

1 clove garlic, minced                                       1 cup beef stock

½ tsp dried thyme                                             ½ tsp dried oregano

2 cups cooked brown rice                                8 oz. Grated cheddar cheese

6 Peppers sliced lengthwise and seeded            salt and pepper to taste

 

Preheat the oven to 350. 

In a heavy skillet brown the ground beef in the oil for 15 minutes.  Add the onion, garlic, tomato paste, beef stock and herbs.  Bring to a boil then simmer until liquid is reduced by half.  Remove from the heat; add the cooked rice and season with salt and pepper to taste.  Set peppers cut side up in a greased baking dish.  Fill with beef and rice mixture, top with grated cheddar cheese and bake for 45 minutes or until golden on top and bubbling.
