From Moosewood Restaurant new classics
2 tsp olive oil 2 cups finely chopped onions
2-3 garlic cloves, minced 1 tsp salt, or more to taste
6 cups chopped tomatoes ¼ tsp ground black pepper
Warm the oil in a 2-quart saucepan. Add the onions, garlic, and salt and sauté on medium heat for about 7 minutes, until golden. Add the tomatoes, their juice, and the pepper and bring to a simmer. Cook 10-15 minutes, stirring occasionally.

**if you like herbs in your sauce, try adding some fresh basil 5min after adding the tomatoes.
