Chilled Cascadilla Soup

From Moosewood Cookbook

 

1 cucumber, peeled, seeded, chopped              1 cup yogurt (can sub cream)

1 scallion, finely minced                                     1 bell pepper, minced

1 small clove garlic, crushed                              3 to 4 raw mushrooms, thinly sliced

½ tsp dill                                                          salt and pepper, to taste

4 cups tomato juice                                                      

*Optional: croutons or minced watercress

 

Combine ingredients and chill before serving.
