5-6 Medium Potatoes, cubed 1 Lemon, juiced
2 TBSP olive oil 1 tsp oregano
1 TBSP butter, melted Salt and Pepper to taste
Preheat the oven to 450. Mix the lemon juice, olive oil, melted butter, oregano, salt and pepper in a large bowl. Add the cubed potatoes and toss well to coat. Spread in a single layer on a baking sheet and roast 35 to 45 minutes, or until golden brown and crisp turning once or twice during cooking.
