From Simply in Season
1 pound swiss chard, washed and pat dry, stems and leaves separated
2 tsp olive oil
1 medium onion, diced
¼ cup dried cranberries or raisins
2 cloves garlic, minced
3 TBSP cider vinegar
1 ½ tsp sugar
Salt and pepper to taste
Chop chard stems diagonally. Stack the leaves, roll them up and slice into 1 inch strips. Keep the stems and leaves separate.
In a deep fry pan, sauté the onions in olive oil over medium heat until soft, about 5 minutes.
Add the chard stems, cranberries or raisins, garlic, vinegar, sugar, salt and pepper. Cover and cook for 8 minutes. Place the chopped chard leaves on top of the mixture, (do not stir in), cover and cook another 2 minutes. Remove from heat, stir and serve.
