From Simply in Season
¾ cup butter, softened
½ cup sugar
½ cup brown sugar
1 egg
1 ½ cups whole wheat flour
1 cup unbleached all-purpose flour
1 ½ tsp baking powder
1 tsp ground cinnamon
¾ tsp salt
½ tsp ground cloves
1 ½ cups grated/shredded zucchini
¾ cup raisins
¾ cup walnuts, chopped *optional
** Chocolate Chip variation: Omit spices and raisins. Add 1 tsp vanilla and ¾ cup chocolate chips.
Preheat oven to 375F.
Cream together butter, sugar and brown sugar. Add the egg and beat until fluffy. Sift together the flour, baking powder, salt, cinnamon and cloves.
Add the dry ingredients and zucchini, alternating a little at a time, to the wet ingredients. Fold in the raisins and nuts if using.
Drop onto a greased cookie sheet and bake for 10 to 12 minutes. Bake cookies as soon as they are mixed. If the batter sits too long it will get a bit watery.
