font-family: Times New Roman;\">Preheat oven to 400.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Toss eggplant, pepper, tomato, onion, and garlic with olive oil, salt and pepper.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Spread on a shallow baking pan.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Roast for 45-55 minutes until slightly brown and soft.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>You can stir once if you remember.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Cool slightly.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: 3.0in;\"><span style=\"font-size: small; font-family: Times New Roman;\">Put the roasted vegetables into a food processor and pulse until blended, but still chunky.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Add more salt and pepper if needed.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; tab-stops: 3.0in;\"><span style=\"font-size: small; font-family: Times New Roman;\">Excellent served with pita chips, pita bread, crostini, or on hot pasta!<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;
