{"id":384,"date":"2009-03-11T15:18:05","date_gmt":"2009-03-11T23:18:05","guid":{"rendered":"http:\/\/www.forthillfarm.com\/news\/?page_id=384"},"modified":"2009-03-11T15:18:05","modified_gmt":"2009-03-11T23:18:05","slug":"chickpea-carrot-parsley-salad","status":"publish","type":"page","link":"http:\/\/recipes.forthillfarm.com\/?page_id=384","title":{"rendered":"Chickpea, Carrot &#038; Parsley Salad"},"content":{"rendered":"<h1 style=\"margin: 0in 0in 0pt; text-align: left;\"><span style=\"font-size: small;\"><span style=\"font-family: Times New Roman;\"><span class=\"byline\">by Molly Stevens, recipe courtesy Fine Cooking<\/span> <\/span><\/span><\/h1>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small; font-family: Times New Roman;\">19-oz. can chickpeas, drained and rinsed (about 2 cups)<br \/>\n1 cup loosely packed fresh flat-leaf parsley leaves, very coarsely chopped<br \/>\n1 cup loosely packed shredded carrot (from about 1 large carrot)<br \/>\n1\/2 cup sliced radishes (about 6 medium)<br \/>\n1\/2 cup chopped scallions, white and green parts (about 4)<br \/>\n3 Tbs. fresh lemon juice<br \/>\n1 tsp. ground coriander<br \/>\nKosher salt and freshly ground black pepper<br \/>\n6 Tbs. extra-virgin olive oil<br \/>\n1\/3 cup crumbled feta cheese or toasted pine nuts (optional)<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: &amp;quot;Times New Roman&amp;quot;;\"><span style=\"font-size: small;\">\u00a0<\/span><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: &amp;quot;Times New Roman&amp;quot;;\"><span style=\"font-size: small;\">Put 1\/2 cup of the chickpeas in a mixing bowl and mash them into a coarse paste with a potato masher or large wooden spoon. Toss in the remaining chickpeas along with the parsley, carrot, radishes, and scallions. Stir to combine.<\/span><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: &amp;quot;Times New Roman&amp;quot;;\"><span style=\"font-size: small;\">In a liquid measuring cup, whisk together the lemon juice, coriander, 1\/2 tsp. salt, and a few generous grinds of black pepper. Continue whisking while adding the olive oil in a slow stream. Pour over the salad and toss gently. Season the salad with salt and pepper to taste.
