{"id":2526,"date":"2015-04-15T19:37:51","date_gmt":"2015-04-15T19:37:51","guid":{"rendered":"http:\/\/recipes.forthillfarm.com\/?page_id=2526"},"modified":"2015-04-16T18:13:47","modified_gmt":"2015-04-16T18:13:47","slug":"broccoli-tofu-in-spicy-peanut-sauce","status":"publish","type":"page","link":"http:\/\/recipes.forthillfarm.com\/?page_id=2526","title":{"rendered":"Broccoli &#038; Tofu in Spicy Peanut Sauce"},"content":{"rendered":"<p><strong>This vegetarian classic from the <em>Enchanted Broccoli Forest <\/em>is a keeper.<\/strong><\/p>\n<h6><strong>The sauce<\/strong>:<\/h6>\n<h6>\u00bd cup good, unprocessed peanut butter<\/h6>\n<h6>\u00bc cup cider vinegar<\/h6>\n<h6>2 Tbs. blackstrap molasses<\/h6>\n<h6>\u00bd cup hot water<\/h6>\n<h6>2 Tbs. tamari sauce<\/h6>\n<h6>\u00bc- \u00bd tsp. cayenne pepper<\/h6>\n<h6><strong>The saut\u00e9<\/strong>:<\/h6>\n<h6>1 lb. of fresh broccoli<\/h6>\n<h6>4 medium cloves garlic, minced<\/h6>\n<h6>1 cup coarsely chopped raw peanuts<\/h6>\n<h6>3 tbs. peanut oil<\/h6>\n<h6>1 lb. tofu, cut into small cubes<\/h6>\n<h6>2-3 Tbs. tamari sauce<\/h6>\n<h6>2 tsp. freshly grated ginger root<\/h6>\n<h6>2 cups thinly sliced onion<\/h6>\n<p>2 freshly minced scallions<\/p>\n<h6>1) Coarsely chop the broccoli florets and thinly slice the peeled stalks on the diagonal. 2) Heat wok and add 1 Tbs. peanut oil and half the ginger and garlic. Lightly salt. Saut\u00e9 over medium heat for 1 minute, then add tofu chunks. Turn heat up a little, and stir-fry the tofu for 5-8 minutes. Mix gently with the peanut sauce. 3) Wipe out wok and heat again, adding remaining 2 Tbs. oil, ginger, and garlic, and lightly salt. Add onions and black pepper, and saut\u00e9 over medium heat until onions are soft (about 5 minutes). 4) Gently warm the peanut-tofu sauce on a very low flame. 5) Add the broccoli, chopped peanuts, and 2-3 Tbs. tamari to the wok, and stir-fry until broccoli is bright green and just tender (about 5 minutes). 6) Pour the peanut sauce over the saut\u00e9, and toss gently until everything is coated evenly.
