{"id":1986,"date":"2011-01-12T11:14:51","date_gmt":"2011-01-12T19:14:51","guid":{"rendered":"http:\/\/www.forthillfarm.com\/news\/?page_id=1986"},"modified":"2011-01-12T11:14:51","modified_gmt":"2011-01-12T19:14:51","slug":"delicata-squash-stuffed-with-beans-and-greens","status":"publish","type":"page","link":"http:\/\/recipes.forthillfarm.com\/?page_id=1986","title":{"rendered":"Delicata Squash stuffed with Beans and Greens"},"content":{"rendered":"<p>from eggsonsunday.wordpress.com<\/p>\n<p>2 medium Delicata squash<\/p>\n<p>Salt and pepper<\/p>\n<p>Lightly flavored oil of your choice<\/p>\n<p>2-3 cloves of garlic, minced<\/p>\n<p>10 oz white beans, cooked<\/p>\n<p>4 large handfuls of greens, spinach, kale, collards, chard, etc\u2026<\/p>\n<p>1 Tbsp sage leaves, minced<\/p>\n<p>4 Tbsp breadcrumbs<\/p>\n<p>1\/4 cup Parmesan cheese<\/p>\n<p>Preheat the oven to 350.<\/p>\n<p>Cut the squash in half lengthwise and scoop out the seeds. \u00a0Brush the oil over the insides of the squash and season with salt and pepper. \u00a0Place on a baking sheet and bake in the oven until just tender (make sure they aren\u2019t so soft they are falling apart).<\/p>\n<p>Meanwhile, in a large saute pan, heat the oil over medium heat. \u00a0Add the garlic and cook for 1 minute. \u00a0Turn the heat up to medium-high and add the greens. \u00a0Cook for 3 minutes, stirring constantly. \u00a0Turn the heat back down to medium and add the white beans and sage. \u00a0Season with salt and pepper and set aside until the squash is done.<\/p>\n<p>Remove the squash from the oven. \u00a0Fill with the kale and white bean mixture.
