{"id":1787,"date":"2010-03-09T08:58:41","date_gmt":"2010-03-09T16:58:41","guid":{"rendered":"http:\/\/www.forthillfarm.com\/news\/?page_id=1787"},"modified":"2010-03-09T08:58:41","modified_gmt":"2010-03-09T16:58:41","slug":"potatoes-with-peppers-and-onions","status":"publish","type":"page","link":"http:\/\/recipes.forthillfarm.com\/?page_id=1787","title":{"rendered":"Potatoes with Peppers and Onions"},"content":{"rendered":"<p><strong>Recipe courtesy Rachael Ray, with modifications by Elaine McMillan\u00a0<\/strong><\/p>\n<p>1-1\/2 to 2 pounds fingerling or red skin potatoes<br \/>\n2 peppers, seeded and cut into thin strips (can be any combination of red and green peppers)<br \/>\n1 medium yellow or sweet onion, thinly sliced<br \/>\n4 large cloves garlic, crushed<br \/>\n\u00bd tsp crushed red pepper flakes<br \/>\n2-3 TBSP extra-virgin olive oil, divided<\/p>\n<p>Preheat oven to 500 degrees F.<br \/>\nCut fingerling potatoes into halves or quarters, depending on thickness of fingerlings &#8212; thin, small fingerlings may also be left hole, larger potatoes should be quartered to speed cooking process. If you are using small red potatoes, halve or quarter them in the same way.<br \/>\nCombine potatoes with peppers and onions, garlic and crushed red pepper flakes. Cover a large cookie sheet with foil. Place potato mixture on cookie sheet. Coat the potatoes, peppers and onions with extra-virgin olive oil\u2014just enough to coat vegetables in a thin layer. Season liberally with salt and pepper.<br \/>\nPlace potatoes in the oven and roast 20 to 22 minutes, until potatoes are just tender and peppers and onions are crisp at edges. Toss mixture with tongs, turning the potatoes after 15 minutes.
