The range of shapes and sizes make it fun to try them all and the colors of purple are exquisite.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span><\/span><\/span><\/div>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">Although it\u2019s pretty to look at, Eggplant is often misunderstood.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>It has a distinct flavor and texture that seems to require an acquired taste.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>To all those people out there that are sworn against eggplant, give a nice looking, locally grown, and freshly harvested eggplant one more try.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Its\u2019 sweet flavor may surprise you.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 16pt; mso-bidi-font-size: 12.0pt;\"><span style=\"text-decoration: underline;\">Storage and Handling:<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">Eggplant likes to be stored at around 50 degrees.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>This is warmer than your refrigerator and cooler than most kitchen counters.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I keep mine on the kitchen counter anyways, and try to use it within 3 days.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">For optimal flavor and firmness use your eggplant as soon as possible but it\u2019s still perfectly fine to use beyond three days but you\u2019ll notice it getting softer.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u2018<\/span><span style=\"font-size: small;\"><span style=\"text-decoration: underline;\">Farmer John\u2019s Cookbook, The Real Dirt on Vegetables\u2019<\/span> recommends wrapping the eggplant in a towel to absorb any excess moisture and storing it in your refrigerators\u2019 crisper drawer for up to a week.<\/span><span style=\"font-size: 16pt; mso-bidi-font-size: 12.0pt;\"> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span><span style=\"text-decoration: underline;\">Culinary Uses:<\/span> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">Eggplant is at its\u2019 simple best brushed with olive oil and grilled.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>But it can also be saut\u00e9ed, baked into eggplant parmesan, blended into baba ganouj, roasted, marinated, layered in a sandwich, stuffed, added to stir fries and curries, and made into soups.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 16pt; mso-bidi-font-size: 12.0pt;\"><span style=\"text-decoration: underline;\">Varieties:<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\"><span style=\"text-decoration: underline;\">Nadia:<\/span> classic dark plum colored Italian variety most often seen in supermarkets.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\"><span style=\"text-decoration: underline;\">Rosa Bianca:<\/span> Italian heirloom variety that is round and fat with white and lavender purple colored skin that is tender and doesn\u2019t need to be peeled.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>This variety cooks more quickly than Nadia.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: small;\"><span style=\"text-decoration: underline;\">Machiaw:<\/span> Asian variety that is long and thin (almost looks like a balloon animal) with a lavender purple colored skin that is tender and does not need to be peeled.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>This variety is excellent in Asian and Thai dishes.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Can also be used in Italian and Mediterranean dishes.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>This variety cooks quickly.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Eggplant is arguably one of the most beautiful vegetables of the summer.
