{"id":1506,"date":"2010-03-05T11:49:59","date_gmt":"2010-03-05T19:49:59","guid":{"rendered":"http:\/\/www.forthillfarm.com\/news\/?page_id=1506"},"modified":"2010-03-05T11:49:59","modified_gmt":"2010-03-05T19:49:59","slug":"warm-roasted-beet-salad","status":"publish","type":"page","link":"http:\/\/recipes.forthillfarm.com\/?page_id=1506","title":{"rendered":"Warm Roasted Beet Salad"},"content":{"rendered":"<p>from Smith &amp; Hawken: <em>The Gardeners\u2019 Community Cookbook<\/em>, modified by Elaine McMillan<\/p>\n<p>1 lb. beets, topped &amp; rinsed<\/p>\n<p>2 cups arugula<\/p>\n<p>1 TBSP rice wine vinegar<\/p>\n<p>1-\u00bd TBSP olive oil<\/p>\n<p>3 TBSP fresh orange juice<\/p>\n<p>Salt and pepper<\/p>\n<p>Preheat oven to 400<sup>o<\/sup><\/p>\n<p>Place beets in a baking dish and sprinkle with a little water. Cover and bake in oven until fork tender, about 1 hour. Remove and cool enough to handle.<\/p>\n<p>Meanwhile, wash and spin dry the arugula, tear into pieces, and place in large salad bowl.<\/p>\n<p>Combine liquid ingredients and blend.<\/p>\n<p>While warm but not piping hot, slip the skins off the beets, then slice them into thin rounds. If beets are large, cut in half or quarters, as appropriate.<\/p>\n<p>Transfer the beet rounds to the salad bowl. Add the dressing and toss to mix. Add salt and pepper to taste and toss again.<\/p>\n<p>Notes: I added some pine nuts, which added another color and texture. I think walnuts or almonds would have been fine.
