This recipe is so versatile you\u2019ll never have to make it the same way twice!<\/p>\n<p>12 ounces angel hair or linguini pasta\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p>3 TBSP extra virgin olive oil<\/p>\n<p>1 onion, peeled and cut into small wedges<\/p>\n<p>2-3 garlic cloves, minced<\/p>\n<p>2 TBSP balsamic vinegar<\/p>\n<p>\u00bd cup chicken or vegetable broth<\/p>\n<p>4 cups cooked winter vegetables (such as Parsnips, rutabagas, winter squash, beets, Broccoli, cauliflower, cabbage, and kale) Cut into bite-size pieces<\/p>\n<p>2 TBSP chopped fresh oregano\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p>3 TBSP chopped fresh Italian Parsley<\/p>\n<p>Salt<\/p>\n<p>Fresh ground black pepper\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p>6 ounces cheese (such as goat, feta, Cheddar, Jack), crumbled or shredded\u00a0\u00a0<\/p>\n<p>\u00bc cup (1 ounce) grated Romano, Parmesan, or Asiago cheese\u00a0\u00a0<\/p>\n<p>Cook the pasta according to package directions.\u00a0 Drain and place in a large bowl.\u00a0 Meanwhile, heat the oil in a large skillet over medium heat.\u00a0 Add the onion and cook for 4 minutes, or until almost soft.\u00a0 Add the garlic, vinegar, and broth.\u00a0 Bring to a boil.\u00a0 Reduce heat to low and simmer for 5 minutes.\u00a0 Add the cooked vegetables, oregano, parsley, and season with salt and pepper.\u00a0 Simmer for 3 minutes, or until heated through.\u00a0 Pour over the pasta, top with the cheeses, and toss to coat well.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>From Your Organic Kitchen Ever wonder what to do with leftover veggies!?
